ALL BEGAN

In the heart of the Amazon, Pancho Lara, co-founder of Yukan Foods, spent over a decade living among native Indians. Immersed in their culture, He learned the secrets of processing cassava, an ancient root known for its incredible health benefits. Cassava, or yuca, was not only a dietary staple but also a symbol of resilience and nutrition.

One day, when processing cassava, an idea
struck him. He envisioned cassava as the
perfect ingredient to create a healthy, gluten-free pizza crust. This crust would be not
only nutritious but also delicious and crunchy.

Eager to bring his vision to life, Pancho ventured to the United States and presented his idea to a group of experienced food professionals. Intrigued by the unique concept, they tasted the pizza made with a 100% cassava crust and were instantly impressed by its flavor and crunchiness.
